A Sweet Note by P & What I Munched for Lunch

My mommy’s name is Jessica. She works at Chesapeake. She makes money at work. Sometimes I stay with Gigi & she goes to work to make more money. She likes to play soccer ball. She likes the red team in football. We like to eat at Cici’s pizza. I get one candy there.





The little man had to write about his family for Thanksgiving. I love this little note! I sound like a workaholic! And just to clear things up--I do not like to eat Cici’s pizza. There are so many better places he could have said...Coolgreen’s, Matthew Kenney’s, Saii...but no, he chose the place his Gigi likes to take him. Goof. I also do not know who the “red team” is--because I don’t watch football. Oh the joys of a four year old perspective.

So today, I posted a lil’ note on Facebook. This week I have been determined to make my lunch every day; not just to save money, but also because the vegan choices at my work restaurant include a salad bar with very little variety. Can we say boring? Of course I’m also grateful there’s a restaurant on campus, so I don’t complain too much!

Today's salad is from Everyday Raw Express by Matthew Kenney--I told you I love this book! Yes, I am vegan; but eating raw foods is something I am passionate about. I eat at least one raw meal a day, most days two.

Cucumber, Radish, & Avocado Chopped Salad
2 c. diced cucumber
1 c. diced radish
2 diced avocados
1/4 c. mint leaves, minced, or microgreens

For the dressing:
2 tbsp. lemon juice
1 tbsp. apple cider vinegar
2 tbsp. olive oil
Salt & pepper to taste


Chop, chop, chop & add the dressing. Super quick & SUPER delicious. I personally am too lazy to measure anything. I usually just “eyeball” it. For this salad, the only thing I wish I had done was add more salt & pepper and one more squeeze of lemon. I love citrus. Also, it says serves 4-6...but I was a pig & ate two servings...twice {of course I spread it out of the afternoon}. If you’re a normal eater, you can share or save some for the next day. 

Hope you love this salad as much as I do! I highly recommend buying this book. Oklahomans, you can stop in Matthew Kenney’s in Classen Curve & purchase a copy. Grab a juice while you’re there for a pick me up. Mmmm. I love that place.
